Tamarillo recipes – Relish Baked Salmon
A quick and easy dinner recipe
Prep Time: 10 minutes
Cook time: 12-15 minutes
Makes: 2 servings
Ingredients:
350g Salmon (2 pieces of fillet to preferred size)
2 dessertspoons soy sauce
2 tablespoons extra virgin olive oil
2 dessertspoons Tamarillo Relish
Method:
You are going to need a baking tray to fit the salmon in a single layer
Place your salmon pieces skin side down in the baking tray. In another bowl mix together the soy sauce, extra virgin olive oil and the Tamarillo Relish. Baste the salmon liberally with the mixture and set aside for half an hour.
Then bake at 180 degrees C. (160 degrees C. if fan forced) for approx. 12-15 minutes until the fish is pale pink all the way through.
Serve hot or cold. This Tamarillo recipe is amazing.
Tamarillo recipes – Relish Cheese Bites
These delicious cheese bites can be added to a lunchbox or jazz up a platter!
Prep Time: 15minutes
Cook time: 12 minutes
Makes: 24 – 30 biscuits
Ingredients:
200g : Flour
100g: Strong Cheese finely grated
100g Parmesan finely grated
1 teaspoon Mustard Powder
2 Tablespoons Tamarillo Relish
Method:
You are going to need a baking tray, lined with baking paper or liberally greased. Set your oven to 180 Degrees C (160 degrees C if fan forced.)
In a food mixer, mix all ingredients to form a soft dough. On a well-floured surface , roll the dough out to 5mm. Prick the dough all over with a fork – this stops your biscuits from puffing up. Using a cookie cutter / scone cutter / floured glass – cut out your biscuits, gather any left over dough and repeat the process until all the dough has been used.
Place your biscuits on the try and bake for 12 – 15 minutes, or until golden brown. These biscuits will keep for a week and freeze well.
Pro Tip1: If you would like a glossy finish to your biscuits, simply brush with egg before baking.
Pro Tip 2: This recipe is great for using up all those bits of hard cheese you may have left over in your oven.
Tamarillo recipes – Vinaigrette dairy and egg free chocolate cake
A quick and easy bake.
Prep Time: 15 minutes
Cook time: 35 minutes
Makes: 12 SERVINGS
Ingredients:
1 extra large cup flour
1 large cup sugar
4 tablespoons cocoa powder
Half teaspoon salt
1 teaspoon vanilla essence
1 teaspoon bicarbonate of soda
6 tablespoons vegetable oil
1 cup water
1 tablespoon Tamarillo vinaigrette
Method:
Set your oven to 180 degrees C. (160 degrees C. if fan forced). Line, or liberally spray, two 20cm baking tins or one 30cm x 40cm baking tray.
- Add all dry ingredients to you mixing bowl, no need to sift.
- Add your oil and mix on low to ensure everything is blended in well and there are no lumps. This should not take long.
- Add your remaining wet ingredients.
- Pour your batter into your prepared tray/s and bake in the centre of the oven for 35mins. Check with a toothpick to ensure it is baked through.
- Leave it to cool. Once cold decorate as you wish…… warning, do not put too much effort into this as it will be guzzled quickly!!

Tamarillo recipes – Vinegar Roasted Root veggies
A perfect side for any dinner, or throw together with salad greens for Summer BBQ.
Prep Time: 15minutes
Cook time: 45 minutes
Makes: 4 SERVINGS
Ingredients:
1 large : Beetroot peeled and diced
1 large: Onion peeled and quartered
4 medium: Carrots peeled and cut into 2cm pieces
1 Tablespoons: Extra virgin oil
2 Tablespoons: Tamarillo Vinegar
Salt and Pepper
Method:
You are going to need a baking dish to fit the veggies in a single layer.
Place all veggies into the baking dish. Mix the wet ingredients and toss through your veggies, season to taste.
Cover and bake at 200 degrees C (180 degrees if fan forced) for approximately 45 minutes or until veggies are soft when tested with a fork. Serve hot or cold.
Serving idea 1: If served cold, include a green salad with tomatoes, avocado and feta cheese.
Serving idea 2: If served hot, use as a side with any main meal.

Tamarillo Vinaigrette Marinade
An easy marinade perfect for a BBQ or pan-fried steak.

Ingredients:
4 tablespoons Tomato Sauce
1 tablespoon Worschester Sauce
1 tablespoon Soy Sauce
1 dessertspoon Extra Virgin Olive Oil
1 tablespoon Tamco Tamarillo Vinegar
Salt and Pepper
Method:
You are going to need a mixing bowl.
Mix all ingredients together. This marinade can be used for steak, kebabs
or chicken.
Simply baste your preferred meat and refrigerate, preferably for a minimum
of 3 hours, until ready to cook.
This Tamarillo recipe for marinade can be kept in the fridge for a week.
Tamarillo Preserve Mascarpone Scones
A delicious alternative!
Prep Time: 15minutes
Cook time: 10 minutes
Serves: 16 people
Ingredients:
500g Flour
2 teaspoons Baking Soda
4.5 teaspoons Cream of Tartar
75gm Butter
I Egg beaten
200mls Cream beaten to soft peaks
125gm Mascarpone
4 teaspoons Tamco Tamarillo Preserve
Method:
You will need a mixing bowl and a baking tray lined with baking paper
greased and floured.
Mix all your ingredients together. Add the butter and mix with your fingertips
until the mixture resembles fine breadcrumbs. Add the milk and mix until
just combined into a soft dough. Do not overmix. Turn onto a floured
surfaces and roll out the dough till 2cm thick. Cut out your scones with a
scone cutter or glass.
Place your scones onto a baking sheet and wash with the beaten egg.
Bake for 10 mins at 220°C.To serve, cut your scones as desired.
Mix 4 teaspoons of the Tamco Tamarillo Preserve with the mascarpone or
serve with Tamco Tamarillo Preserve and whipped cream.
Tip:
These scones are best eaten fresh, left-over scones can be frozen and
thawed as required.
